3 Ingredient Banana Bread
This 3 ingredient banana recipe is so easy, it feels like cheating! Last minute bake sale? Unexpected guests? This recipe is for you! With just 3 ingredients and less than 10 minutes of prep time, it doesn’t get much better.
Ingredients: Its as easy as 3, 2, 1!
3 overly ripe bananas (I wait until they brown and then save them in my freezer until I’m ready to use them!)
2 large eggs
1 box of cake mix – your choice of flavor (I used carrot cake mix for this batch but anything goes, even chocolate!)
Optional walnuts, chocolate chips or whatever you have on hand!
Instructions: MIX!
Preheat your oven to 350 degrees.
Mash up your overly ripe bananas with a fork or whisk in a medium sized bowl. I don’t like my banana bread chunky, so I take my time with this step. Next, stir your eggs into the banana mush. Once the bananas and eggs are well combined, add in your bag of cake mix. Combine the cake mix, egg and banana mixture until there are no more lumps.
This mix will be thick, thats ok! If you’re adding walnuts or any other optional add ins (like chocolate chips – yum!) do so now. I always reserve just a bit of my mix ins for the top!
Grease a medium loaf pan and add your batter, be sure to smooth out the top as best you can. Remember, its going to be thick – so push it into those corners! Top the batter in the loaf pan with your optional mix ins and bake for 30-45 minutes or until a toothpick comes out clean. You could also use this to make muffins or multiple smaller loafs but the cooking time will vary.
Voila! Now your home smells amazing!
It’s really that easy, three simple ingredients and a few basic steps later and now your home now smells like you’ve been slaving away in the kitchen! This recipe is great for last minute unexpected guests since the ingredient list is so short, just save those overly ripe bananas in your freezer (you can thaw them quickly in the microwave) and keep a box of cake mix on hand! It’s also my secret weapon for when I need a baking induced mood boost but don’t have a whole lot of time to commit! I hope you enjoy this easy recipe as much as I do!
